Julien Moussi has a knack forre-energising tired suburban cafes and milk bars, most often as part of his prolific Only Hospitality Group.
But his latest project – with his wife Kristy-Lea Moussi – is separate from the Only stable.
Five years ago, he had his eye on a site in Mount Waverley, which fell through. But a turn of fate led him to his newest venture Hamlet, in a refurbished corner milk bar on Marianne Way.
Inspired by its location on a small retail strip, Moussi named it after the Old French term for a little village. The space was freshened up with cork-cladded walls (for both aesthetics and soundproofing), plus brushed stainless steel accents and a custom Modbar machine pouring Moussi’s own Inglewood Coffee Roasters, also located in Mount Waverley.
