Julien Moussi has a knack for re-energising tired suburban cafes and milk bars, most often as part of his prolific Only Hospitality Group.

But his latest project – with his wife Kristy-Lea Moussi – is separate from the Only stable.

Five years ago, he had his eye on a site in Mount Waverley, which fell through. But a turn of fate led him to his newest venture Hamlet, in a refurbished corner milk bar on Marianne Way.
